PirateCraft is one of the most ambitious servers we've played on, and it even has full ship-to-ship combat mechanics. Like all Minecraft ideas of this size, it's a little clunky, but it works. Ships can be built and sail across the seas, guns can be mounted on the hull and then used to fire at enemy ships.
On land, the simple but functional economy replicates the trading and mining of the period, and players can create their own Minecraft houses and Minecraft buildings in "safe zones" to stash and store treasure. Safe zones are burglar-proof, meaning you can build as much as you want without fear of others destroying your masterpieces.
Piratecraft's salty setting makes it one of the best Minecraft RPG servers. Of course, if you're playing as a pirate, there's a bit of fiddling around, and if the owner is in a safe zone, other players can besiege him. To join a Minecraft server, first find a server you like - such as any of the ones listed below - and find out its IP address. Launch the game, click "multiplayer", then "add server". Then enter the IP address and name the server.
